8 Impossible-to-Resist Veggie Dishes by Jennifer Segal

Every now and again, I come across a vegetable dish that makes me think I could be a very happy vegetarian. From a hearty summer white bean ragout to balsamic-glazed roasted beets, here are a few of my favorites.

1. Summer White Bean Ragout

This quick ragout of white beans and sweet summer tomatoes might just be my favorite recipe of the summer. The tomatoes — just barely cooked — burst in your mouth when you bite into them, while fresh herbs and a splash of balsamic vinegar liven the dish up.
